Maofeng tea Brewing & Tasting


Proper brewing methods can fully bring out the natural aroma and delicate taste of Huangshan Maofeng.
1. Tea ware: Clear glass cups are the first choice for watching tea leaves unfurl in the water; white porcelain gaiwans are also recommended for capturing the original pure fragrance of tea liquor.
2. Tea dosage: The ideal tea-to-water ratio is 1:50. Put 3 grams of tea into a 200ml glass cup.
3. Water temperature: This is the most critical point. Use hot water between 80–85°C. Boiling water will scald tender buds, turning the liquor yellow and bringing out unpleasant bitterness and astringency.
4. Brewing method: The middle infusion method is highly recommended. Pour one third of hot water into the cup first, add tea leaves and shake gently to moisten the tea. Once the aroma is released, fill the cup up to seven-tenths full. This way the fragrance can be perfectly awakened.
5. Tasting: Steep for 2 to 3 minutes before drinking. The same batch of tea can be re-brewed another 2 or 3 times.
