What is gunpowder tea ?

In China, this tea is known as zhū chá, which roughly translates to “pearl tea” but should not be confused with boba tea, which is a type of sweet, milky tea that is also known as “pearl tea”. Gunpowder tea is produced in China, where green tea leaves are rolled into small balls (similar to the production of oolong tea), which allows for safer transportation while also helping retain more of the unique flavour and fragrance that green tea possesses.

Gunpowder tea is not flavoured like jasmine tea, and it typically contains only one type of tea. It is believed to have first been produced over 1500 years ago in the Zhejiang province in Eastern China, a region that produces more tea than any other and is responsible for the famous Longjing green tea (which is also known as “dragon well tea”).

These days, gunpowder tea is produced all over China and you’ll also find it in other major green tea–producing countries, particularly regions known for growing both oolong and green tea.

  • Picking Tea Leaves: Zhucha Green Tea is made from leaves from the Camellia sinensis plant that are carefully picked by hand. Only the top tender leaves are selected to ensure the highest quality.
  • Withering: The picked tea leaves go through a withering process. This process involves spreading the tea leaves on bamboo trays and letting them wither under controlled temperature and humidity. The withering process removes excess water from the tea leaves, preparing them for the next step.
  • Steaming or Pan-frying: After withering, the leaves are steamed or pan-fried to prevent oxidation. Steaming is a common method in Japan, while pan-frying is more common in China. Both methods are designed to stop enzyme activity in the leaves and preserve their natural green color and fresh flavor.
  • Rolling: After the tea leaves are steamed or pan-fried, they are rolled into small particles, giving Zhucha its distinctive appearance. Rolling the tea leaves helps release natural oils and flavors, making for a stronger, more aromatic cup of tea.
  • Drying: The final step in the production process is to place the rolled tea leaves in a pan to dry. This ensures that the tea leaves retain their shape. The tea leaves are carefully dried using hot air or charcoal to remove any remaining moisture.
