Yellow tea is the rarest of the six major tea categories in China. Producing a sweet, fragrant, and refreshing yellow tea requires extremely precise control of the process-the "yellowing" stage demands careful attention to temperature, humidity, and time; even a slight miscalculation can ruin the entire batch. Furthermore, many consumers find yellow tea's color unappealing and its appearance unsightly, resulting in low market acceptance and a scarcity of tea companies willing to produce it. Many tea drinkers have sampled all six major tea categories but have never tasted yellow tea. Representative varieties like Junshan Yinzhen and Weishan Maojian, despite having "needle" and "maojian" in their names, are actually yellow teas, not green teas.
