2. Southern Fujian Oolong Produced in Anxi, Fujian. Its classic variety is Anxi Tieguanyin, with delicate long-lasting floral notes.

3. Guangdong Oolong Originates from Chao'an, Guangdong. Phoenix Dancong is its representative, boasting abundant fragrance types and a strong, full-bodied taste.

4. Taiwan Oolong Cultivated all across Taiwan. Dongding Oolong stands for this category, delivering sweet, fresh and smooth liquor.

⚙️ Production Craftsmanship

The core procedure of oolong tea is leaf manipulation (zuoqing). The general processing steps are as follows:

1. Withering: Remove excess moisture to soften fresh tea leaves.

2. Leaf Manipulation (Core Step): Alternate shaking and resting the leaves. The leaf edges collide and sustain minor damage, triggering partial oxidation. This creates the distinctive feature of "green leaves with red edges" and builds natural floral and fruity aromas.

3. Fixation: High-temperature heating deactivates oxidase enzymes to lock in the unique flavors formed during leaf manipulation.

4. Rolling (Shaping): Knead leaves into strips or tight globules while squeezing out tea sap to enrich the taste.

5. Drying: Bake away residual moisture to stabilize quality and amplify the tea's fragrance.
