To brew spring rice green tea, you'll need a teapot with a strainer and cup, or a mug and a regular infuser or tea strainer. Use about 2-3 grams of tea per cup of water. Spring rice is a strong tea and using more may result in a very strong tea. Start with fewer leaves and adjust the amount as needed. Fresh spring water is boiled and cooled to about 185°F. The water temperature for brewing green tea should not be higher than 194°F. Boiling water will ruin your tea and cause it to become very bitter.

 

Preheat the tea set by pouring hot water in and out. This step will achieve the best brewing results, give you a chance to experience the true aroma of the dried leaves, and remove any dust from your tea set. Place the tea leaves into a teapot or tea bag or infuser. Add water and let soak for 1-2 minutes. Start by steeping for 1 minute, if the brew is too strong for your taste, increase the temperature.
