Flavor differences resulting from the shaping processes of Gunpowder tea and Chunmee tea
"Mei" (Leaf) tea features loose, open strands and a higher degree of leaf cell rupture, allowing for the rapid release of constituents during brewing; it yields a fresh, fragrant liquor with distinct chestnut notes and develops a rich flavor quickly. In contrast, "Zhu" (Gunpowder) tea consists of tightly rolled layers that release their contents slowly; it produces a mellow, sweet-aftertaste liquor with minimal bitterness and withstands prolonged boiling or steeping-qualities that align with the African custom of brewing tea in large pots over extended periods, which is a key reason for the divergent market preferences between the two regions.
