Avoid getting wet: Green tea is a loose and porous hydrophilic substance, so it has strong hygroscopicity and moisture absorption. When storing green tea, the relative humidity of 60% is more suitable. If it exceeds 70%, mildew will occur due to moisture absorption, and then acidification will deteriorate.
Second, avoid high temperature: the best storage temperature for green tea leaves is 0-5 ℃. If the temperature is too high, the amino acids, sugars, vitamins and aromatic substances in tea will be decomposed and destroyed, which will reduce the quality, aroma and taste.
Avoid sunlight: sunlight can promote the oxidation of green tea tea pigments and esters, and can decompose chlorophyll into pheophytin. Green tea leaves are stored in glass containers or transparent plastic bags. After being exposed to sunlight, the internal substances will undergo chemical reactions, which will deteriorate the quality of green tea leaves.
Four Avoid Oxygen: Chlorophyll, aldehydes, esters, vitamin C, etc. in green tea leaves are easily combined with oxygen in the air. The oxidized green tea leaves will make the green tea tea soup red and darker, which greatly reduces the nutritional value.
Wuji peculiar smell: Green tea leaves contain macromolecular palm enzymes and terpenes. These substances are extremely unstable in biological activity and can absorb odors widely. Therefore, when tea leaves are mixed with odorous items for storage, the odor will be absorbed and cannot be removed.
