About Chun Mee
Chun Mee is a light, mild Chinese green tea with a characteristic buttery, plum-like flavor. It has a slightly astringent taste and a clean finish. Like all green teas, Chun Mee is made from the leaves of the camellia sinensis plant, and is pan-fired soon after harvesting in order to halt oxidation and preserve its bright green color. In Chinese, Chun Mee means "precious eyebrow," poetically referring to the distinctive long, curved leaves of this delicate tea.
Chun Mee is a popular tea among green tea lovers and newcomers alike, with a mellow flavor and a small amount of caffeine. In general, Chinese green teas are lighter than their Japanese counterparts, which are known for their rich, grassy flavor. Our organic Chun Mee brews up into a pale yellow liquor, and has a subtly sweet flavor, with a fuller body than white teas but lighter body than most other green teas. Chun Mee Caffeine Content
Like many other green teas, Chun Mee is relatively low in caffeine, containing about half as much as black tea and a quarter as much as coffee. The caffeine content present in tea is influenced by several factors, including:
Tea varietal - Chun Mee is produced from the camellias sinensis var. sinensis varietal. This varietal, which is native to China, tends to be lower in caffeine than the camellia sinensis var. assamica varietal, which is native to India.
Processing methods - Like other Chinese green teas, Chun Mee is pan fired soon after harvest in order to halt the oxidation process. Teas that are pan fired tend to be lower in caffeine than teas that are steamed.
Water temperature - The hotter the water you use, the more caffeine will be present in your tea. We recommend preparing Chun Mee with water that is steaming, but not boiling. This lower water temperature will result in a less caffeinated cup, and also prevents the tea from burning or becoming bitter.
Steep time - We recommend steeping Chun Mee for approximately one to two minutes. Like other green teas, Chun Mee shouldn’t be oversteeped, since it can become bitter or too strong if infused for too long.
