The "yellowing" process for yellow tea: Moisture content determines success or failure
The core processing technique of yellow tea, "yellowing," is divided into two types: dry-leaf yellowing and wet-leaf yellowing. Wet-leaf yellowing occurs after fixation or rolling, with the tea leaves containing approximately 40-50% moisture. This process is rapid, typically completed in 6-8 hours, as seen in Wenzhou Yellow Bud and Weishan Maojian. Dry-leaf yellowing occurs after initial drying, with the tea leaves containing approximately 20-25% moisture. This process is slower, usually requiring 5-7 days, as seen in Junshan Silver Needle and Huoshan Yellow Bud. A slight mistake during the yellowing process can ruin the entire process. While there are many tea masters who can make green tea, very few can make yellow tea.
