Classification of Chunmee and Gunpowder Tea Varieties Based on Processing Origins
Both *Chunmee* and *Gunpowder* teas belong to the broad category of pan-fired green teas destined for export; while both are produced from fresh leaves consisting of a bud and two or three leaves, their initial shaping processes differ significantly.
After the fresh leaves undergo fixation (kill-green), "long-strip" pan-fired tea is shaped into slender strands through rolling and pan-frying; the finished product is known as *Chunmee*. In contrast, "round" pan-fired tea undergoes repeated rolling, tumbling, and compression to curl the leaves into small, round pellets; after refining and grading, this becomes *Gunpowder* tea. These two varieties represent my country's largest exports of green tea.
