Bubble tea is clearly Taiwanese. Its exact birthday is much less clear.

A new way to sell tea

During the 1980s, Taiwanese tea shops experimented with cold tea, milk, sweetness, shaking and chewy tapioca pearls. Smithsonian describes bubble tea as a Taiwanese original and identifies Taichung as a plausible centre of development.

Chun Shui Tang tells a product-development story in which tapioca dessert was added to cold tea. Other Taiwanese businesses have also claimed invention. The result is not a single uncontested founder story, but a period of rapid beverage innovation.

Why it spread

The drink could be customised by sweetness, ice and toppings.
A sealed cup and wide straw made it portable.

What "bubble" originally meant
The word can refer to the foam created by shaking as well as the pearls now associated with the drink. Modern usage varies.
