Components of green tea chunmee

It contains eight major groups of substances:

① Tea Polyphenols: Account for 15% to 30% of dried tea. In green tea, they are mostly catechins with a much higher content than black tea. Black tea polyphenols are mainly converted into theaflavins.

② Alkaloids: Dominated by caffeine, making up 2% to 4% of tea.

③ Tea Polysaccharides: Approximately 3% of tea weight.

④ Protein & Amino Acids: Free amino acids take up 2% to 5%.

⑤ Vitamins: Fresh tea leaves contain 0.6%–1% vitamins, among which Vitamin C is the most abundant.

⑥ Carbohydrates: Around 22% of tea.

⑦ Lipids: 2% to 3%, including phospholipids, sulpholipids, glycolipids and various fatty acids. ⑧ Minerals: Calculated as ash content, minerals occupy 4%–6%. Potassium salts make up 50% and phosphate accounts for 15%. Other elements include calcium, magnesium, iron, manganese and aluminium, plus trace elements such as copper, zinc, sodium, boron, sulphur and fluorine.
